Ingredients:
• 2 cups of rolled oats
• 1 large apple, peeled and grated
• 1/3 cup sugar or alternative sweetener to taste
• 1 egg (or egg substitute for a vegan option)
• 1/4 cup vegetable or coconut oil
• 1 teaspoon cinnamon powder
• 1/2 teaspoon vanilla essence
• 1/2 teaspoon baking soda
Preparation:
1.Preheat the oven to 180°C and line a baking sheet with parchment paper.
2.In a large bowl, mix the oats, grated apple, cinnamon and baking soda.
3. Add the brown sugar and mix well.
4.In another container, lightly beat the egg with the oil and vanilla.
5.Combine the wet ingredients with the dry ingredients until the mixture is homogeneous.
6.Form small balls with the dough and flatten them on the tray to shape them into cookies.
7.Bake for 15-20 minutes or until golden brown and firm to the touch.
8.Let cool before serving.
